Thanks for the question! With time, wisteria will eventually grow a large trunk.

However, I’m doubtful that planting two side-by-side will work. To get it to be tree-like, you will need to be vigilant about pruning and figure out a system for supporting it while training it to be a tree. I’ve read it can take up to ten years to get the trunk sturdy enough to stand on it’s own without additional support. It may still need staking to keep it from leaning, but there are many 'wisteria structure' resources available for inspiration.
